Highland cattle are a Scottish breed primarily raised for their meat. They have long, wavy coats of fur in black, red or yellow with long horns. Highland cattle are considered a hardy breed due to their origin in the Scottish highlands, with cows weighing up to 1,100 pounds and bulls up to 1,800 pounds. The meat produced from Highland cattle is considered the highest quality, especially due to its low cholesterol.
Highland cows are docile in temperament but can be very protective over their young; they produce milk with high butterfat content. Compared to other breeds, Highland cattle have a longer life expectancy of up to 20 years but are unable to tolerate the heat in warmer countries.
