The Brown Swiss is the second most popular breed of dairy cattle in the world today, producing 20,000 pounds of milk per year. Native to Switzerland, some believe its history dates back to the 17th century but is not confirmed. Its milk contains an average of 4% butterfat and 3.5% protein, an ideal ratio for cheese production.
Contrary to their name, Brown Swiss cattle can be grey, dark brown, tan or white, with black muzzle, hooves and switch. They are most often recognized for their big, floppy ears and very docile temperament. This breed of cattle is very adaptable is both hot and cold climates and considered easy to care for. Brown Swiss cattle are also known for their long gestation period.
