Ayrshire cattle are a breed of dairy cattle originating in Ayrshire, Scotland before 1800. The Ayrshire cattle are considered medium-sized cattle with adults ranging in weight from 900 – 1,300 pounds. Ayrshire cattle are red and white in appearance, with the red ranging from light orange to dark red. The horns on Ayrshire cattle can reach over 12 inches in length and used to be considered a hallmark of the breed; however, today most calves are polled to prevent injuries both to other cattle and their handlers. They are known for their excellent foraging abilities and milk production; a typical Ayrshire cow can produce up to 20,000 pounds per year. The quality of the milk is desirable for butter and cheese making. Other desired traits they possess are hardiness, easy calving and longevity.
