The Assaf breed originated in Israel and is a domesticated breed produced from a cross between Awassi and East Friesian sheep. They are considered a dual-purposed breed used for both milk and meat. Both males and females have white wool and face color.
Most breeders in Israel have sought after the Assaf sheep because of their quality milk and excellent mutton production. They are also hardy animals that adapt to extensive production systems. In Israel, ewes can produce up to 450 liters of milk per year.
Assaf sheep have begun to be demanded all over the world including Spain, Portugal, Chile and Peru.
