Akaushi is a type of Japanese Wagyu cattle and is the primary beef used in Kobe restaurants. Due to a very strict breeding program over the last 100 years to improve positive genetic qualities, this breed is exceptionally consistent in its traits, including maternal, fertility, structural, carcass and palatability. The Akaushi cattle produce a very tender and flavorful meat since it is marbled with fat. It is also known for having a high ratio of monounsaturated to saturated fat and high concentrations of oleic acid, a fatty acid good for heart health. Outside of Japan, the largest purebred group of Akaushi cattle is in Harwood, Texas. A group of off-duty Texas Rangers guarded the original 11 imported Akaushi cattle from crossbreeding; today, there are more than 5,000 cattle present.
