The Black turkey is a breed of domestic turkey that is also known as Black Spanish or Norfolk Black. This breed was developed in Europe from Aztec turkeys brought over by Spanish explorers. The Norfolk Black is considered the oldest breed of turkey in the United Kingdom. When it was developed, black turkeys were not common in flocks but were heavily favored. Breeders selected for this trait until it became predominant. The plumage on a Black turkey is a shiny black with a greenish sheen. Any brownish, bronze or white is considered to be unfavorable. The standard weight for toms is 23 pounds and for young hens is 14 pounds. However, Black turkeys are not currently bred for standard attributes and therefore appear smaller today than is standard. Black turkeys are raised entirely for meat production.
