Toulouse is a breed of domestic geese that is used to describe many gray geese that were descended from the European Greylag. Because of its large range of characteristics, the American Livestock Breeds Conservancy recognizes Toulouse geese as one breed with two types, production and dewlap. The Production Toulouse is a large bird with good egg laying ability, producing 25 – 40 eggs per year.
These birds thrive on small farms and homesteads. The Dewlap Toulouse is an extremely massive bird that is bred primarily for its ability to gain weight and make fois gras.
Toulouse geese are very placid, making it difficult to do well in a mixed flock but do not wander often and will stay close to home. Dewlap Toulouse geese are one of the more difficult types of geese to raise successfully due to their lower fertility.
